PEANUT BUTTER CARAMEL COOKIES

MAKE – 48 cookies
INGREDIENTS
- 1 CUP Packed brown sugar
- 3/4 CUP Peanut Butter
- 3/4 CUP Sugar
- 2/3 CUP Butter Softened
- 2 Eggs
- 1 Teaspoon Baking Soda
- 1 Teaspoon Vanilla
- 2 1/2 CUP All Purpose Flour
- 1/2 Teaspoon Salt
- 10- Ounce packet mini milk chocolate caramel-filled candies, unwrap and cut in half
STEPS
1. Heat oven to 375°F
2. Put brown sugar, sugar and butter in a bowl and mix it. Beat at medium speed until creamy.
3. Add peanut butter, eggs and vanilla, and keep beating until it get mixed well. You can scrap the bowl if necessary.
4. Now add flour, baking soda and salt, beat at low speed till it gets mixed well.
5. Shape rounded tablespoonfuls of dough into 1 1/4 inch balls. Press one candy in half in centre of each ball, cut-side up.
6. Form the dough around candy, and make sure the candy is completely covered. Place 2 inches apart onto ungreased cookie sheets. Cookies will spread and they will flatten as they get baked.
7. bake 10-12 minutes or till you see light golden brown around edges. Then cool 1 minute on cookie sheets. remove to cooling rack.
